This is a 60 day mash ferment with Ralph Thompson, Fatali and Reaper along with Calamondin citrus, sweet onion, garlic and cardamom. On blend steamed onions, golden raisins and cherry wood grilled yellow bells were added and blended with Meyer lemon juice, more cardamom, AC vinegar and garlic. Salted to taste then pasteurized. It is a little smokey, hot but not too hot with loads of flavor and a hint of ferment funk. 53 bottles total in this batch
