Sear & Loathing (formerly known as Reaper Madness)
 
Over 2lbs of Carolina Reaper in this batch of 85 bottles. It is for the serious pepperhead but we tried to tone it down and flavor it up this year.
 
This is a 42 day ferment of Reaper mash with yellow onion, carrots, garlic and a hint of cardamom. On blend - pineapple, lemon, and orange juice along with apple cider vinegar (in liberal amounts to cut the heat). Added body with sweet onion, garlic, steamed carrots. Finished with orange peel and ginger powder, then salted to taste.
Bright and tangy with up front heat. Great on tacos!
 
4.0 ph - safe in or out of the fridge. Separation is normal so shake well before use
