Verde Birdy is a 45 day mash ferment of green jalapeno, banana pepper, cow horn peppers, Anjou pear, sweet onion, anise, and coriander. The mash was tangy and had a nice heat by its self so to keep the flavor profile intact and get to the desired consistency, we added apple cider vinegar, lime juice, and white grape juice delivering subtle heat and authentic pepper mash flavor.
